3 c flour
2 tsp baking powder
½ tsp salt
1 c butter
1 ½ c sugar
3 eggs
½ tsp vanilla
½ tsp coconut extract
1 can (400 ml) coconut milk
1 c shredded unsweetened coconut



Frosting
1 8 oz (250 g) package cream cheese
4 T butter
1 tsp vanilla
3 ½ c confectioners sugar
1 ½ c coconut (flakes are the best)

Preheat oven 350ºF. Coat 2 8" round cake pans with non stick spray and line the bottom with waxed paper and spray.

In a large bowl whisk flour, baking powder and salt. Set aside.

In another bowl beat butter and sugar until fluffy. Beat in eggs one at a time beating after each addition. Add vanilla and coconut extracts.

Using a mixer on low speed, add flour mixture, in 3 additions, alternately with coconut milk. Fold in coconut. Divide into the 2 pans evenly and bake for 40 minutes or until done. Cool on a wire rack for 15 minutes.

Frosting
Cream cream cheese and butter together until well mixed. Add confectioners sugar until to the desired consistency.

Spread strawberry jam between the 2 layers of cooled cake. Frost the cake. Coat the whole outside with the flaked coconut.
