1½ cup flour
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
2 sticks butter
1 cup brown sugar
½ cup granulated sugar
2 large eggs at ROOM TEMPERATURE
1 Tablespoon molasses
2 tsp vanilla
3 cups old fashioned oats
1¾ cups chocolate or raisins

Directions:

Whisk flour, cinnamon, baking soda, salt, set aside.

Beat butter on HI speed until smooth (1 minute). Add eggs, molasses, vanilla on HI speed until combined (1 minute). Scrape down sides, bottom of bowl, beat again to combine.

Add dry ingredients, mix on LOW until combined. Beat in the oats and chocolate or raisins. Dough will be thick and sticky. Cover and chill for at least 45 minutes. Allow to sit at room temperature for 30 minutes before baking.

Preheat oven to 350ºF. Line baking sheet with parchment paper.

Scoop about 3 tablespoons dough and bake for 13-14 minutes until lightly browned on the sides. Center will be very soft.

Remove from oven and cool on sheet for 5 minutes before transferring to wire rack to cool completely.

Cookies will stay fresh covered at room temperature for up to 1 week.
