Blueberry Poptarts Recipe

About 2 c chilled pie dough

3 c frozen blueberries
3/4 c sugar
3 tbsp cornstarch
3 tbsp lemon juice
1/4 tsp vanilla

1 egg

Directions:
Stir blueberries, sugar, lemon juice, and cornstarch over medium heat until thickened. Cool completely before assembling poptarts. If you plan on making miniature poptarts, send the blueberry filling through a sieve first.
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Roll out pie dough and cut into whatever size of poptart your heart desires! Place the bottom pieces on baking sheet.
Whisk egg with about a tsp of water. Dab your finger in the egg and run it around the outside edge of each square or circle of dough, just enough to attach the top piece of dough.
Place a spoonful of blueberry filling on each bottom piece of dough, making sure it does not run over the edges.
Place the top piece of dough (also rolled thin) over the berry filling and press down around the edges with a fork to seal each pop tart.
Brush the tops with more egg wash and sprinkle lightly with sugar.
Bake until golden brown. Cook time will vary based on size of pop tart.

This recipe was created for my friend Samantha who mentioned once that she likes pop tarts. Even though they can be quite tedious to make, they still became a favorite garnish on desserts or just little gift for her every once in a while.
