2 c sugar
1 c brown sugar, packed
¾ c oil
4 eggs, room temperature
2 t. vanilla
1 1/2 c buttermilk, room temperature
1 1/2 c hot black coffee
3 c flour
3 t. baking soda
1 ½ t. baking powder
1 ½ t. salt
1 c dark cocoa powder

ICING
6 c confectioners sugar, sifted
1 c butter
1 ⅓ c dark cocoa powder
1 ⅓ c heavy whipping cream, more or less
1 t. vanilla
generous pinch of salt

Preheat oven to 325ºF. Grease and flour 3 - 9 inch cake pans. In a large bowl mix white and brown sugar and oil. Mix in eggs, one at a time. Mix in vanilla, buttermilk and coffee until combined. Set aside.

In a large bowl sift together flour, baking soda, baking powder, salt and cocoa. Gradually mix dry ingredients into wet ingredients. Pour the evenly into the 3 cake pans.

Bake on middle rack for 25 minutes. (Do not overbake. cake should look moist on the top.) Remove from oven and let sit until pans are warm to the touch. Carefully remove from pans and finish cooling on racks.

Prepare frosting by combining confectioners sugar, butter and cocoa in a large bowl until crumbly. Gradually add cream until you reach desired texture. Add vanilla and salt.

When cakes have cooled, assemble into three layers with icing between each layer. Cake gets better the next day.

I have made this cake with my gluten free flour that I mix up and no one knew the difference. Did need an extra 20-30 minutes of baking time. I also use regular icing rather than this buttercream recipe. The dark cocoa powder takes away a lot the extreme sweetness of the normal icing.
