1 can chickpeas, drained
1/4 cup sesame oil*
2 sweet potatoes, baked in microwave, peeled and cubed *can substitute a additional can of chickpeas
1/2 batch prepared pesto (see recipe this cookbook) or purchased pesto
1/4 to 1/2 cup pine nuts
1/2 cup chopped sundried tomatoes
Sturdy crackers, such as Triscuit

Directions:
Directions:
Process chickpeas, sweet potato, and sesame oil in food processor until smooth. Spread into a wide shallow dip container (can divide into two smaller containers if desired). Spread with Pesto to cover. Sprinkle with pine nuts. Chop sundried tomatoes and sprinkle on top. Serve with sturdy crackers.
