10-15 fresh oysters, in their liquor (if large oysters, cut in half)
1 bag small oyster crackers
1 stalk celery, (strings removed/sliced paper thin)
1 small onion, minced fine
1½ sticks of butter, melted
2/3 to 1 cup evaporated milk
1/2 cup chopped fresh parsley
Salt and pepper

Butter medium casserole dish. In skillet sauté celery and onion for 2 minutes. In large bowl combine crackers, celery, onion, oysters with 2/3 cup of oyster liquor, salt and pepper and half of the parsley. Stir well. Place into greased dish. Pour evaporated milk over entire dish. Drizzle melted butter over crackers and the rest of the parsley. Bake at 350ºF for approximately 35 minutes or until crackers start to brown and liquid has evaporated.
