4-6 boneless skinless chicken breasts (or 8-10 chicken thighs, if you prefer)
1 can cream of mushroom or cream of chicken soup
1 C mayo
1 C parmesan cheese
1 Tbsp fresh lemon juice
1 tsp Curry powder
1/4 - 1/2 C sherry

Optional: bread crumbs and a bit of butter to brown them in

Preheat oven to 350º

Mix all the ingredients and pour it over the chicken.

Cook for 50 min - 1 h, depending on the breast thickness.

Optional: Brown 1 C of bread crumbs in butter and spread on top for the last 20 minutes or so of cooking.

This is an easy-to-prepare meal that I like to serve on top of thin spaghetti.
