1/2 cup light mayonnaise
2 Tablespoons Dijon mustard
2 Tablespoons sweet pickle relish
2 Tablespoons white vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
5 cups cooked white potatoes
1/4 cup minced fresh parsley

Directions:

Combine the first six ingredients in a large bowl. Add potatoes and toss, gently. cover and chill overnight. Garnish with parsley.
