Ingredients: 1 Cup All-Purpose Flour 1/2 TSP Cinnamon 1/2 TSP Baking Powder 1/4 TSP Salt 1 1/2 Cups Rolled Oats 1/2 Cup Unsalted Butter, Room Temperature 1/4 Cup Sugar 1/4 Cup Light Brown Sugar 1/4 Cup Dark Brown Sugar 1 Large Egg, Room Temperature 1 TSP Vanilla Extract 1/2 Cup Raisins 1/2 Cup Craisins

Directions:1. In a large bowl, sift All-Purpose Flour, Cinnamon, Baking Powder, and Salt together. Whisk in Old-Fashioned Rolled Oates. Set aside. 2. In the bowl of a stand mixer with the paddle attachment, beat the Butter and all 3 Sugars together for 1 to 2 minutes or until well combined. Add the Egg and the Vanilla Extract until fully combined, stopping the mixer to scrape the sides and bottom of the mixer as necessary. 3. Slowly add the dry ingredients and continue mixing on low speed until just combined, then mix in the Raisins and Craisins. 4. Cover the cookie dough tightly in plastic wrap and refrigerate for at least 30 minutes. 5. Preheat the oven to 350º F, and line 2 cookie sheets with parchment paper. Remove dough from refrigerator. Using a cookie scoop, scoop cookie dough and drop onto prepared baking sheets. Gently press cookie down with your hand to flatten each cookie slightly. Make sure to leave a little room between each cookie as they will spread a little while baking. Bake for 10-12 minutes or until the edges of the cookies are a light golden brown and the tops are set. 6. Remove cookies from oven and allow cookies to cool on baking sheet for 5 minutes before transferring the cookies to a wire rack to cool completely. |

Notes: If you want a more uniform cookie, you can roll the dough out prior to putting them in the refrigerator with a rolling pin and use a cookie cutter to get the dough to the uniform size you want. Just don't cut them too big, as they do tend to spread and get a bit larger.
You can also use other dried fruits in these cookies. There are so many out there these days, Mangos, Apples, Apricots, Strawberries.....the list goes on. Make your own cookies and enjoy.
