Yukon Gold potatoes
Hard boiled eggs
Red onion
Shredded carrots
Mayonnaise
Salt and pepper

Cut Yukon Gold potatoes into large chunks. Steam or boil until tender (check with point of sharp knife). Cool potatoes in fridge until cold. Hard boil eggs and let cool, then chop into chunks. Chop onion and peal then shred carrots (use a thick cut cheese shredder), if not pre-shredded.

Mix in cold cubed potatoes with chopped hard hard boiled eggs, chopped onion, some shredded carrot, and mayonnaise. Season to taste with salt and pepper.
