Ingredients: Dough: 4 c flour 2 eggs at room temperature 1 tsp salt 1 c water (reserved from boiling potatoes)

Directions: |
Directions:Make your favorite mashed potatoes, reserving 1 cup of the water for the dough.
Place flour into a deep bowl; make a well in center. Drop in eggs and water; stir well. Knead until smooth. Put aside to rest 30 minutes in a warm place.
Divide Dough in half. Roll thin on floured board, cut with a round biscuit cutter. Place a heaping teaspoon of filling (recipes follow) on each circle of dough. Fold over and pinch edges to seal, going over edges twice to be sure there are no gaps.
Drop into boiling salted water and cook 5 to 8 minutes, they will rise to the top when done. Remove with slotted spoon and set aside in melted butter until all are cooked.
Cheese filling: Squeeze 1 pound of cottage cheese as dry as possible (I use a flour sack towel for this). Add 1 egg yolk and a pinch of salt; mix well.
Potato Filling: Cook and mash potatoes (reserving 1 cup water for the dough). Add caramelized diced onions to mashed potatoes; then cool. |

Notes: These are a favorite of my family. We use cottage cheese in the cheese filling because we can't buy farmer's cheese here in the West. But it works just as well. My personal favorite filling is a mixture of cheese and potato.
