1 c. raisins
1 c. brown sugar
1 c. coffee
1/2 c. shortening
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. ginger
1 egg beaten
1tsp. baking soda
1 c. sifted flour

Directions:
Directions:
Preheat oven to 350 degrees. Grease 8 inch loaf pan. Combine raisins, sugar, water and shortening, salt and spices. Boil five minutes. Remove from fire and cool slightly. Stir in egg. Sift flour and baking soda, add to mixture. Pour into loaf pan and bake 1 to 1 1/4 hour until done.

This cake was a favorite of my moms, Lucille. It was always on the counter.

I have seen apples and walnuts added to this recipe also.

It is also know as the Great Depression Cake.
