IRISH SODA BREAD

4 c all-purpose flour
3 Tbsp sugar
1 Tbsp baking powder
1 tsp salt
3/4 tsp baking soda
6 Tbsp butter
1 1/2 c raisins
1 Tbsp caraway seeds
2 eggs
1 1/2 c buttermilk

GUINNESS BUTTER

2 stick butter, room temp
3 oz Guinness
3 Tbsp honey

Directions:
Directions:
1. Preheat oven to 350F. Grease 1 9-inch round pan.
2. In the mixer bowl combine flour, caraway, raisins, cubed butter, sugar, baking powder, salt, and baking soda.
3. In a measuring cup with buttermilk, add one egg and beat. In a separate bowl, take the remaining egg and a bit of water and beat. Reserve this to brush dough with just prior to placing it in the oven.
4. With the mixer on low speed, add buttermilk and egg mixture. Mix until just blended; do not over mix.
5. Place dough on a floured surface. Add a bit more flour to top of the dough ball and knead for about 10 strokes to make a ball.
6. Place in greased pan. Baste with egg wash.
7. Cut a cross on the top with a sharp knife.
8. Bake for 1 1/2 hours. Allow to cool and wrap in plastic wrap this goes stale quickly.
9. A great addition to the final product is Guinness butter. To make, mix 2 sticks of room temp butter, 3 oz of Guinness, and 3 tablespoons honey in a mixer.
