3 cups milk
1 cup sugar
5 tablespoons flour
½ teaspoon salt
3 eggs, separated
1½ teaspoons vanilla
½ cup shredded coconut

1 baked pie crust (Granny made the best, I couldn’t learn her technique so I use store-bought)

Directions:
Directions:
In a double boiler, cook above ingredients except for egg whites, until thickened, stirring almost constantly as not to scorch.

Pour into baked pie shell.

Mix egg whites and ½ cup sugar and ½ teaspoon cream of tartar until stiff peaked form. Spread meringue on pie filling. Bake at 350º until meringue is golden brown.
