6 large egg yolks (½ cup) at room temperature
1 c sugar
1¾ heavy whipping cream
1¼ c mascarpone cheese
1 c cold strong coffee
2 - 7oz packages Lady Fingers (Savoiardi style)
1 oz cocoa, for dusting

Directions:
Combine sugar, yolks in double boiler (or very low heat) Cook for 10 minutes stirring constantly.
Remove from heat and whip until thick and lemon coloured
Cool briefly, add mascarpone to yolks beating til well combined.
In separate bowl whip cream to stiff peaks, starting at low speed increasing gradually. Fold into egg yolk mixture. Dip Lady Fingers in cold coffee, just briefly both sides. Place in 9" pan arranging till one complete layer. Add half of filling, then another layer of Lady Fingers dipped in coffee, and remaining half of filling. Cover well and refrigerate for several hours. Just before serving dust with cocoa powder using a sieve to get it more even. Cut in 9 pieces to serve.
