Cooked Butter Icing


Ingredients:

2 cups sugar
1 cup Lard
3 eggs

1 ½ tsp. soda
1½ tsp. cinnamon
3 cups flour
1 tsp. salt

2 cups raisins
2 cups water
Boil raisins and water together for 20 minutes. Set aside to cool.
1 cup nuts

Directions:

Mix sugar, lard and eggs together by hand. (Do not use electric mixer)
Add the raisins and water.
Mix all dry ingredients and add to this mixture.
Add chopped walnuts.
9 X 13 pan greased and floured
Bake for 45 minutes at 350º
 

Cooked Butter Icing

½ cup canned milk undiluted
¼ cube butter or margarine
1 tsp. vanilla

Bring to a slow boil until sugar granules melt.
Bring to a rolling boil for 3 minutes.
Whip with spoon until it begins to thicken to desired consistency.
You can add powered sugar if needed to thicken.

This cake recipe will be changed totally if you use an electric mixer to mix. It will
become a fluffy cake
I have found that it does very well using the solid Coconut Oil instead of the Lard.
