- 5 Potatos
- 5 Eggs
- 1/4 cup diced onions
- 2-3 diced dill pickles
- Mayo
- Yellow mustard
- Salt & Pepper

Boil potatoes till soft (about 8). Peel and cube. Put in large bowl

> Hard boil about 5 eggs.  Peel and dice and add to potatoes

>

> 1/4 cup diced onion. Add to bowl

>

> Dill pickles - diced (couple of large dills)

> Add to bowl

In separate med bowl, mix mayonnaise (I start with about a qtr cup)  add enough yellow mustard to get a great med yellow color. Add salt and pepper (potatoes always good with a extra bit of salt)



Add mayo mix to potatoes, onions, pickles



Add eggs and stir till everything coated (make more Mayo mixture if too dry)



Sprinkle top with paprika

My grandma was born and raised in Japan. When she came to the US, she had no idea how to speak english and didn't know much about American food.

This was her first American dish which she learned from her husband (my grandfather)'s mother how to make this delicious potato salad! It is now a staple for all family gatherings in the summer on all sides of my family now.
