2½ cups Flour
3/4 cup Sugar
1 tsp Baking Powder
1¼ tsp Allspice
1/2 tsp Salt
2 rounded tsp Cinnamon
1 cup Brown Sugar
2 Eggs
1 cup Buttermilk* see note below
1 tsp Baking Soda
1 cup Oil
1 tsp Vanilla
1 cup Nuts (opt)

* Make your own buttermilk by adding 2 Tbsp vinegar to the milk. Let it sit while working with the dry ingredients.

Preheat oven to 350ºF.

Add the first 6 ingredients to bowl and mix with fork. Add brown sugar and mix with hands to remove lumps. Take ½ cup mixture and mix with enough oil to be crumbly. Save for topping.

In another bowl, beat eggs, milk, & baking soda. Add to dry ingredients. Add oil & vanilla. Beat until smooth. Lick the beaters!

Pour into cookie sheet/baking tray with sides. Sprinkle crumbly mixture over top. Sprinkle nuts over too, if desired. Bake about 20 minutes.

My mother sometimes worked in the school cafeteria when I was a kid. She brought this recipe home one day and it was an instant hit. I continued to make it for my family, as well. We all love it, as do guests. Quick & easy to make!
