For the casserole:
2 large chicken breasts
1 (32 ounce) box of Chicken broth
1 onion chopped
¾ cup shredded carrots
2 cups instant rice
1 cup frozen peas
1 teaspoon rotisserie chicken seasoning
1 teaspoon thyme
½ teaspoon rosemary
1 teaspoon garlic powder
½ teaspoon sage

For the cheese sauce:
1 cup chicken broth
1 cup shredded cheddar cheese
2 tablespoons flour

For the topping:
1 tablespoon melted butter
½ cup panko breadcrumbs

Directions:
Directions:
Place the chicken breasts in a stockpot with the chicken broth and seasonings. Cook on high until bubbling. Simmer over medium low for 30 minutes. Remove chicken and add the carrots and rice to the broth. Cook for 30 minutes or until the rice absorbs the majority of broth. While the rice is cooking mix the flour with the chicken broth, slowly until forming a paste. Finish adding the cup of broth/ paste to a small saucepan, stirring over medium high heat until bubbling and blended, Reduce heat to medium/medium low and add the cheese, stirring until blended. Preheat oven to 350º. Chop the chicken breasts and add to the rice with the frozen peas and cheese sauce. Mix together, then put in a 13X9 pan. Mix the Panko with the melted butter, then spread evenly over the casserole. Add a little more shredded cheese if desired. Cover with aluminum foil and bake for 30 minutes. Uncover and continue to bake for another 10 - 15 minutes.
