Grandma Hall's Pie Crust Recipe

1 C Lard or shortening
3 C All purpose flour
1 tsp Salt
7-8 Tbs Ice water
1/2 Additional all purpose flour for rolling

Directions:
Directions:
Combine first three ingredients until crumbly and about pea size. Add ice water and mix by hand until all dry ingredients have been incorporated. Mix should form a very stiff dough. Refrigerate for 10 minutes. Divide into 3 equal pieces, for 9-10" pie dishes. Roll out on floured work surface. Work dough as little as possible to prevent tough crust. Put in pie tins and bake at 400° for 10-12 minutes or until lightly browned.

Note from Hall Cookbook: This recipe is the one used by Grandma Hall all of her life. She said she learned to make this crust while working at the restaurant at the Junction in Park City, often making 20-30 pies every day.
