1 ½ c sugar
1 c butter, softened
8 oz cream cheese, softened
1 egg
1 ½ tsp vanilla (or 1 tsp almond extract and ½ tsp vanilla)
½ tsp baking soda
1 tsp baking powder
2 ½ c flour

Frosting:
½ c butter, softened
4 oz cream cheese, softened
3 ½ c powdered sugar
2 tsp vanilla
Dash of salt
Milk, cream, or half and half
Food coloring, if desired

Cream butter, cream cheese and sugar. Add egg and extract; blend until smooth. Mix in all of the dry ingredients. Do not overmix. Grease a half size cookie sheet (13 x 18 inch) with cooking spray. Spread the dough into the pan with a long knife or offset spatula. It's a little bit hard to spread the dough; use flour on the knife or on our hands.

Bake at 350 degrees for 20-25 minutes, just until golden brown. (This time depends on your oven. Mine is done in 18 minutes) Let cool completely.

FROSTING:

Cream the butter, cream cheese and sugar in a large mixing bowl. Add the vanilla and salt. Add milk, a little at a time, until the frosting is spreading consistency. Add food coloring, if desired.
