1 cup all purpose flour
1/2 tsp cinnamon ~ ground
1/2 tsp baking soda
1/4 tsp sea salt
1 1/2 cups rolled oats
1/2 cup unsalted butter~room temperature
1/2 cup dark brown sugar
1/4 cup granulated sugar
1/2 tsp vanilla extract
1 large egg ~ room temperature
1 cup raisins

Directions:
Directions:
1) Whisk together in a large bowl flour, cinnamon, baking soda and salt. Stir in rolled oats.
2) In another large bowl with a hand held mixer, beat the butter, brown sugar and granulated sugar for 1 to 2 minutes until well combined. Add the egg and vanilla extract until fully combined.
3) Add dry mixture and continue mixing on a low speed until just compined, now add in the raisins.
4) Cover the dough with stretch wrap and refrigerate for 30 to 60 minutes.
5) Preheat the oven to 350 F ~ 180 C and line two large baking sheets with parchment paper.
6) Once the dough is chilled using a 1 1/2 inch cookie scoop, scoop dough and drop on to baking sheets. Roll the dough into a ball and press down with palm of your hand to flatten each ball slightly. Leave about 1/2 inch space between each cookie for expansion.
7) Bake for about 12 minutes or until the edges are a golden brown and the tops are set.
8) Let cool for 5 to 10 minutes on the baking sheets, then transfer to a wire rack.
9) Cookies can be stored in an airtight container for up to one week or in your freezer for up to 3 months.
