1 cup butter softened (do not use microwave to soften)
1 cup brown sugar
1 cup sugar
1 1/2 cups of peanut butter (You can use creamy or crunchy. I like to use 1 cup creamy and 1/2 cup crunchy)
2 eggs
3 cups flour
1 teaspoon baking soda 1 teaspoon vanilla extract Sugar for sprinkling

Directions:
Directions:
Preheat oven to 350º. Cream together butter, sugars and peanut butter. Add eggs, flour, baking soda and vanilla extract and mix until combined. Use a large cookie scoop and place large scoops on a baking stone (preferred) or cookie sheet. Using a round potato masher or similar (or large serving fork to make criss-cross pattern) press the cookies down. Bake for 12 minutes or until just turning golden brown. Sprinkle with a little sugar immediately after removing from the oven. Let sit on the baking stone for a few minutes before transferring to cooling rack.
