Dough:
1 C Shortening or butter
5 C Flour, approximately
2 C sugar
1 tsp Baking Soda
2 Eggs
1 tsp Salt
1 C Buttermilk
1 tsp Vanilla

Filling:
2 C Raisins
1/2 C Water
1/2 C Sugar
1/2 tsp salt
2 Tbs Cornstarch
1/3 C Orange juice

Directions:
Directions:
Mix together shortening, sugar and eggs. Add remaining ingredients. Chill dough. It should be fairly soft. Combine filling ingredients and cook over low heat until thickened. Roll out dough and cut into desired shape. Place 1 Tbs filling on half of cookie dough piece, fold over and seal. Bake in a preheated 375° oven for 12-15 minutes. Remove from oven and sprinkle with sugar.

I usually double the amount of filling I make. I cut circles, fill and fold over to bake. I don't like to make these too big.
