3 large white onions, sliced thin and separated into rings
¾ c. milk
1 egg
½ c. cornstarch
⅔ c. flour
1 tsp. salt

Directions:
Directions:
Soak onion rings in cold water for about 2 hours. The cold water removes the strong taste of the onion and allows the subtle sweetness to come through. Drain and pat dry on paper towels. Mix milk, egg, cornstarch, flour and salt. Dip onion rings in batter and fry a few at a time in deep fat. “Deep fat” was the terminology used in the original recipe. You can use 2 – 3” of your preferred oil. Fry several minutes on each side until golden brown. The crumbles left in the pot are also delicious. Salt and serve immediately.
