1 1/2 c. shortening
2 c. white sugar
2 eggs
2 T. vanilla extract
1/2 c. light molasses
4 c. all-purpose flour
4 tsp. baking soda
2 tsp. salt
2 tsp. ground nutmeg
2 tsp. ground ginger
1 (10 oz.) pkg. Hershey's Cinnamon Chips
1 c. white sugar for decoration

Directions:

Preheat oven to 350 degrees

In a large bowl, cream shortening and 2 c. white sugar until smooth. Beat in eggs one at a time, then stir in vanilla and molasses. Combine flour, baking soda, salt, nutmeg and ginger; stir into the sugar mixture until well blended. Mix in Cinnamon Chips. Dough will be stiff. Roll into walnut sized balls and roll each ball in remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheet and flatten slightly.

Bake 8-10 minutes in preheated oven. Let cool on baking sheet a few minutes before removing to a wire rack to cool completely .
