3 C flour
1 1/2 C sugar
1 1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
3/4 C vegetable oil
3 large eggs
1 (8-oz) can crushed pineapple, drained
1 C finely grated carrot
1 C finely grated Granny Smith apple
1 C chopped pecans
1 C golden raisins

Directions:
Directions:
Preheat oven to 350º. Spray two (12-cup) muffin pans with non-stick cooking spray.

In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt. Add oil and eggs, stirring until just combined. Add pineapple, carrot, apple, pecans, and raisins, stirring until just combined. Spoon batter into prepared muffin cups.

Bake for 18 to 22 minutes or until wooden pick inserted into center comes out clean. Cool in pan for 5 minutes, then remove.


*We leave the peel on the apples for added nutrition
