The recipe below is for one batch. I double the recipe to make 2 batches because one batch is very small, and we love the leftovers.

3/4 cup oat flour
1/4 cup old-fashioned oats
1/4 cup 100% pure maple syrup
1/4 cup almond butter or peanut butter
1 tablespoon flaxseed meal
1.5 teaspoons vanilla extract
1/4 cup raisins

Directions:
Directions:
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

In a bowl, stir together all the ingredients. When the ingredients are well combined, portion the dough on a lined pan roughly 1-tablespoon scoops. Leave them round (for softer cookies) or press them a little bit flat (for crispier cookies).

These cookies do not rise so however you put them on the baking sheet is how they will finish.

Bake 12-15 minutes, until lightly browned.


Variations:
You could really add anything you wanted to these, but I prefer them as indicated in this recipe. You could add chocolate chips, peanut butter chips, dried cranberries instead of the raisins.
