1 c mashed potato flakes
¾ c flour
¼ c cornstarch
¾ c cornmeal
4 tsp salt
1 tsp paprika
1 ½ tsp black pepper
1 ½ T sugar
1 tsp poultry seasoning

Chicken pieces (I use chicken thighs and breasts, cut in half, crosswise)
More flour for dusting
1 egg
½ c buttermilk

½ c melted butter (approximately)

Directions:
Combine the first 9 ingredients to make breading.

Dust chicken pieces with flour, then in milk and egg (combined), then roll in the breading. Place on a parchment-lined cookie sheet. Don't over crowd! Pour melted butter over chicken. Bake at 400º for 1/2 hour. Turn chicken and bake another 1/2 hour, lowering oven to 375º.

You may put in a casserole dish to only to keep warm in oven.

Alternate method: Bake coated chicken on a rack to brown on both sides. You probably will still have to turn the chicken.
