1 green pepper
1 red pepper
1 yellow squash
1 zucchini
2 handfuls fresh spinach
1 handful fresh string beans
1 small bunch broccoli
1 red onion

1 bottle Whole Foods 3-citrus Teriyaki sauce

1-1.5 lbs. fresh salmon, skinned

1 1/2 c. Brown rice

Directions:
Directions:
Start cooking rice either in a steamer or in a saucepan as per steamer or package directions.

Wash and chop all vegetables in 1/2" pieces. Blanch vegetables in a steamer or saucepan with a little water just until slightly cooked. Color should remain bright. If blanching in a saucepan, blanch peppers together, remove and then blanch zucchini, then squash and onions, then string beans, then broccoli, and lastly, the spinach for just a minute, adding more water as necessary to keep about 1/2" in pan. As each group is slightly cooked, put into a large bowl and toss with half of the teriyaki sauce. Keep adding veggies as each group is cooked. Drain all water from pan and add 1/2 bottle of teriyaki sauce and salmon to pan. Cover and cook on a very low simmer about 12 minutes, breaking salmon into chunks as it cooks.

You may use chicken, shrimp, or beef in place of the salmon, if desired. This is definitely a family favorite!
