1 1/8 c. butter
1 c. white sugar
1/4 c. heavy whipping cream
1 tsp. baking soda
3 1/4 c. all-purpose flour
1 tsp. ground cinnamon
1 tsp. ground black pepper
1 1/2 tsp. ground cardamom
1 tsp. baking powder

Cream together butter and sugar until light and fluffy. Stir in the cream. Add the baking soda and little water (no more than 2 tbsp) to the butter mixture.

Sift the spices, baking powder and flour into the butter mixture. Blend until a nice dough is formed.

Roll dough into sausage shapes about 2 1/2 inch in diameter and wrap tightly in waxed paper and let dough chill thoroughly.

Preheat oven to 375 degrees. Remove chilled dough and cut into thin slices.

Bake on a lightly greased cookie sheet for 6-8 minutes. Remove from oven. Let cool slightly. Remove from cookie sheet and allow to cool completely on cooling racks.

This recipe doesn't use eggs. It's a great tasting cookie and similar to other pepperkakor recipes, but this one is my favorite.

In Norway, one Christmas tradition is to serve at least 7 different kinds of cookies at Christmas. My Grandma Ruth always followed this as well so there was always a wide variety at her house.
