Christmas Cookie


Ingredients:

8 ounces Solo Almond Paste softened
1 cup of granulated sugar
4 eggs
1 1/2 cups margarine softened
1 teaspoon almond extract
2 cups flour
red and green food coloring
12 ounce jar of raspberry jelly
4 ounces semisweet chocolate
2 tablespoons milk

Directions:
Directions:
Cream together almond paste, sugar, and margarine.

Add eggs and almond extract, beat well.

Add flour. Beat until smooth and fluffy.

Divide dough into three parts; 1 yellow, 1 green and 1 red.

Grease bottom and sides of 3 9 x 13” pans. Line with waxed paper.

Pour one color in each pan.

Bake at 350 degrees for15 minutes. Cool on rack, invert pan and peel off waxed paper.

Place green layer on foil lined cookie sheet. Spread with jelly, place yellow layer on top and spread with jelly, top with red layer. Cover with foil and place weighted object on top . Chill overnight.

Melt chocolate with milk. Spread over red layer. Cool.

Cut into1” squares.

I use foil 9 x 13” pans or smaller or 8 x 10” pans. It doesn’t matter just so they are all the same size. This is one of Grace’s favorite Christmas Cookies, it probably wouldn’t seem like the holidays without them to her,
