1 3/4 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 t baking powder (optional)
1 teaspoon cinnamon
1 cup (2 sticks) unsalted butter, at room temperature
1 cup white sugar
1 cup packed dark brown sugar. ((Or 1 3/4 brown sugar only)
2 eggs
2 teaspoons pure vanilla extract
3 cups old fashioned rolled oats
3/4 cups raisins
3/4 cups dried cranberries
1 cup chocolate chips

(((( optional. 1/2 t fresh rosemary, finely chopped)))

Preheat oven to 350 degrees. Combine flour, baking soda, salt and cinnamon in a bowl and mix well. In a big bowl, beat the butter, white and brown sugars until light and fluffy, about 4 minutes. Add the eggs, one at a time, beating each egg until fully incorporated. Add the vanilla and mix well. Add the flour, little by little, mixing until fully incorporated. With a wooden spoon, mix in the oats, raisins and cranberries. Put in the fridge to chill for 10-15 minutes.
Line 2 baking sheets with parchment paper. With an ice cream scoop or spoon. Place on baking sheet. Lightly press to make a disk about 1/2 inch thick. Bake for 11 minutes. The cookies are done when the edges are brown, but the center should look lighter in color. Leave the cookies in the pan for 10 minutes to let them firm up and then transfer to a rack to cool completely.
