Ingredients: 1 1/3 c frozen raspberries 1 8oz cream cheese 2 tbsp icing sugar 1/2 tsp vanilla 1/8 tsp orange zest 1 8 oz container cool whip Chocolate Coconut Shortbread (shortbread and toppings)

Directions:Soften cream cheese. Blend cream cheese with icing sugar and vanilla until smooth. Blend in raspberries and orange zest. Fold in cool whip. Cover in plastic wrap and place in freezer for minimum 2 hours. Cut 1 1/2 inch rounds out of chocolate shortbread. Using a 1 1/2 inch cookie scoop, scoop the raspberry mixture onto shortbread rounds and quickly pour on about a teaspoon of chocolate topping, followed by a sprinkle of slivered almonds and himalayan pink salt. Return to freezer until a few minutes before serving. |

Notes: This recipe is a combination of two of my best friends' favorite desserts that I make: raspberry cheesecake bites and chocolate coconut shortbread. We enjoyed these together with the Budd family tonight, our kids running around and playing together. While I also like doing desserts for fancy events, these are the moments I truly cherish.
