Molten Lava Cakes

6 tbsp butter
3 tbsp peanut butter
1/2 c semi-sweet chocolate chips
2 tsp toffee flavored syrup
1 tsp vanilla
14 tbsp icing sugar
2 tbsp cocoa
2 eggs
2 egg yolks
6 tbsp flour
1 tsp salt

Directions:
Directions:
Preheat oven to 400ºF.
Grease and dust with cocoa powder 2 4" ovenproof ramekins.
Melt butter, peanut butter, and chocolate chips together and whisk until smooth.
Whisk in toffee syrup, vanilla, and then icing sugar and cocoa.
Whisk in eggs, egg yolks, and then flour and salt.
Pour into prepared ramekins and bake until set on top but still a little jiggly in middle, 15-17 minutes.
Allow to rest in the ramekins for at least 5 minutes before running a knife around the outside of the lava cake and turning out onto plate.
Serve immediately with peanut butter whipped cream.
 

Peanut Butter Whipped Cream


Ingredients:

1/2 c whipping cream
1 tbsp peanut butter
1/8 tsp vanilla
2 tbsp icing sugar

Whisk all ingredients until smooth in a small mason jar.
Tighten mason jar lid and then shake jar until whipped cream is set, about 3 minutes.
