2 c. Sugar
1/2 c. Water
1/2 c. White Corn Syrup
1/2 tsp. Salt
2 Egg Whites
1 c. Nuts, chopped coarsely, optional

Directions:
Directions:
Cook all except egg whites and nuts to the hard ball stage (238º) While cooking, beat egg whites until stiff. When syrup reaches 238º, take out 1/2 cup and add it slowly to the egg whites while the mixer is running. Set aside. Continue to cook the syrup until it reaches 252º. Remove from stove and add egg whites to the syrup. Stir constantly until it begins to set up. Some say when it loses it's sheen, I think it is just a little too long. Use two spoons to drop it on waxed paper. Can add chopped nuts to the recipe or put a half walnut on top.

This recipe takes at least two people to scoop out the candy. Mom always said that when she made this it never turned out. I have had it every Christmas for my entire life. When Grandma quit making it, I (Dixie) took over. She always said you can't make it on a humid day. She taught me using a cup of cold water to test the temperature, but a candy thermometer is a big factor in the success.
