1 sm. can Crushed Pineapple
2 c. Sugar
1/2 c. Nuts, chopped
3 c. Flour
1/4 tsp. Salt
1 c. Butter
3/4 cup Milk

Directions:
Directions:
Cook pineapple and sugar until it becomes thick jam. Cool. Add nuts. Reserve. Mix the rest of ingredients. Roll out 1/2 the dough into cookie pan bottom. Prick the rolled dough full of fork point holes. Put jam in center. Have the other 1/2 dough rolled out flat and full of fork holes and put on top. Press together lightly. Bake until golden brown in medium oven (350º).

This is Dixie's all-time favorite recipe of Mom's. So delicious!

Linda's Note: Mom said the only things I wanted for Christmas were bubble lights and pineapple cookies. Mom continued making them for my Christmas gift for many years, mailing them to me after we got married. I continue on with this tradition of making them for Christmas.
