2 Tbsp melted butter
4 eggs
¼ cup maple syrup or honey (OR sugar with 2 Tbsp water) *double for a more dessert-like dish
1 tsp vanilla
¼ tsp almond extract (optional)
1 c milk
3 c old fashioned rolled oats
½ tsp salt
1 ½ tsp cinnamon
½ tsp ground nutmeg
1 tsp baking powder
8 c chopped unpeeled apples (about 8 apples, easiest to cut out core then pulse in food processor to chop).

Directions:
Directions:
Preheat oven to 350º. Stir together all ingredients except apples. Add apples and stir.
Pour into a greased two quart dish and smooth out. Bake at 350º for 50 minutes in a greased 2 quart dish.

For "Muffins", place cupcake liners in a muffin pan, scoop thick batter into each (fill to top since it will not rise. Bake at 350 for 30 minutes.

As shown, this recipe will make 12 muffins as well as an 11x7 casserole pan (or 24 muffins).

Apple Pie meets Baked Oatmeal. Delicious and healthy breakfast. This is really 'baked apples with oatmeal' rather than the typical 'baked oatmeal with apples'.
