2 T unsalted butter
1 medium yellow onion, finely chopped
4 cloves fresh garlic pressed or minced
½ tsp fine salt
Freshly ground black pepper
Pinch of cayenne pepper
½ tsp nutmeg
16 oz fresh spinach
4 oz cream cheese
¼ c Parmesan cheese
(Optional cream or milk if needed.)

Directions:
Directions:
In a medium pan melt butter. Add onion, garlic, salt, pepper, cayenne, and nutmeg. Cook until the onion is soft.
Add spinach in big handfuls and cook until wilted.
Add cream cheese and mix until melted.
Add Parmesan cheese and stir until combined.
Remove from heat, taste and adjust seasoning.

Cream or milk can be added if too thick.
This recipe will also work well with frozen spinach, or a combination of fresh and frozen spinach.
Work well increased for large groups.

Served during Christmas time at Smoky Lake. Very much like Lawery’s creamed spinach. Nice because it is not overly wet.
