1 ¾ cup strong black coffee
¼ cup of bourbon (I use Jack Daniels)
5 oz of unsweetened baking chocolate
2 sticks butter, cut into pieces
2 cups of granulated sugar
2 cups of flour
1 tsp baking soda
Pinch of salt
2 eggs, lightly beaten
1 tsp vanilla

Pre-heat oven to 275º. Butter a bundt-style pan (or 6-8 mini pans) and dust the bottom and sides with unsweetened cocoa powder

Heat the coffee and bourbon in a heavy pan. Add the chocolate and the butter, cook, story gently until melted and smooth. Remove the pan from the heat, stir in the sugar and let mixture cool for 3 minutes.

Transfer to mixer bowl, using the whisk attachment.

Sift together the flour, baking soda and salt. Add in four separate additions to the batter, beating at a slow speed (unless you want chocolate on your ceiling). Add the eggs and vanilla. Beat until sooth. Pour the batter into the pan and bake on the middle rack for 1 ½ hours (if using small pans, check after 20-25 minutes, adding 10 minutes at a time until firm)

Cool completely in pan before inverting. Can serve with a dusting of powdered sugar.
