Ingredients:  
chicken breasts - skinless, boneless, thin
oil (I use light extra virgin, but any oil with a high smoke point)

Breading:

flour - GF is fine, use 1-to-1
breadcrumbs - GF is fine, Italian seasoned if possible
Italian seasoning
garlic salt
parmesan cheese
1 egg
milk
salt
pepper

salt and pepper your chicken breast pieces

Prepare breading - in 3 shallow dishes combine:

Dish One:
flour, salt, pepper to taste (maybe about a cup and a half)

Dish Two:
combine egg and milk. Maybe about 1/2 cup milk to 1 egg, or slightly more

Dish Three:
Mix together breadcrumbs,
Italian seasoning - pretty much. More than you think you need
Garlic salt - at least a teaspoon
parmesan cheese - maybe about two tablespoons

Coat chicken breast with flour, then dip in egg mixture, then coat with breadcrumb mixture.

Fry over medium high heat until browned and crispy.
