Shortbread


Ingredients:

1 c butter
2 tbsp coconut oil
1 tsp vanilla
1/4 c sugar
1 1/2 c flour
1/2 c cocoa
3/4 c icing sugar
1/4 c cornstarch
1/4 tsp salt
1/2 c mini chocolate chips
3/4 c coconut

Directions:
Directions:
Preheat oven to 350ºF. Grease a 7"x11" pan.
Cream butter, sugar, and vanilla. Sift together the flour, icing sugar, salt, cocoa, and cornstarch. Add to butter in 3 additions, mixing until fully incorporated between additions. Stir in coconut and mini chocolate chips.
Press into pan and bake until set but still soft, about 25 minutes.

2/3 c semi sweet chocolate chips
1 1/2 tsp coconut oil

Melt chocolate chips and coconut oil together and carefully spread over cooled shortbread. Top with slivered almonds and a little himalayan pink salt.
