Ingredients: ⅔ Cups packed brown sugar ½ Cup granulated sugar ½ Cup softened unsalted butter 1 tsp vanilla extract 1 egg 1 Cup all purpose flour ¼ tsp baking powder 1 tsp sea salt ¼ Cup malted milk powder 2 Cups store bought caramel corn 1 Cup chopped macadamia nuts

Directions: |
Directions:Cream butter, then add sugars and beat on high 5 minutes or until pale and creamy.
Mix egg and vanilla together and add to the butter mixture beat until well combined.
Sift flour, baking powder, malted milk powder and salt together, add to mixture and beat until combined.
Add the popcorn and nuts fold into combine.
Shape dough into balls and place on a parchment lined baking sheet and flatten them slightly.
Bake at 325º for 7½ minutes rotate the trays and bake another 7½ minutes or until cookies are golden brown. |

Notes: I invented these cookies in honor of my Dad-Robert O’Brien he loved macadamia nuts and pink popcorn. I remember when we would go to the zoo we would always get the pink popcorn. When these cookies are baked they remind of the pink popcorn my dad would get us at the zoo.
