1. 3 TBSP butter, plus 3-4 more TBSP for the pan

2. 1 Cup flour

3. 1 TBSP sugar

4. 1/8 teaspoon salt

5. 3/4 cup milk

6. 1/2 cup water

7. 2 large eggs

8. Optional: 1 ½ teaspoons vanilla

1. Melt 3 TBSP butter, let cool a bit.

2. In med. bowl, mix the melted butter, flour, sugar, salt, milk, water, eggs, and vanilla.

3. Use the remaining butter for greasing the pan between each crepe.

4. Pre heat a cast iron iskillet over medium heat and generously grease it with some of the reserved butter.

5. Once the skillet is hot, pour 3-4 Tablespoons (closer to 3 is best) of batter into the center of the pan.

6. Lift the pan and tilt it so that the batter forms a thin "pancake" like shape. The thinner the better

7. Cook for 1-2 minutes, then flip as soon as the bottom is set.

8. Cook the other side for 30 seconds until set.

Grampy used to take them off the skillet and place them on a plate and put a pat of butter on them. Then he would roll them up and put syrup on them for us. My most favorite cooking memory of grampy....besides his meticulous measuring of bacon, to be sure that Brian and I had eaual amounts.
