CRUST
1 ½ c graham wafer crumbs
6 T butter
1 tsp cinnamon
¼ c sugar

CHEESECAKE FILLING
4 - 8oz cream cheese
¼ c caramel sauce
½ c sugar
3 large eggs
¼ c sour cream
1 tsp vanilla
¼ tsp cinnamon

TOPPING
½ c each brown sugar, flour and oats
1 tsp cinnamon
⅓ c butter
2 apples, peeled and chopped

Directions:
Directions:
Oven temp 325º for 1 hr and 20-30 min, cool in oven for an hour with oven door open.

Combine all crust ingredients and press into 8" spring form pan.

For the filling
Beat room temperature cream cheese, caramel sauce and sugar til smooth, scraping bottom of bowl once to ensure no cream cheese lumps remain.
Add eggs, also room temperature, once at a time, beating only til incorporated. Add remaining ingredients beating only til smooth.
Pour into crust.

For topping
In frying pan or pot, melt butter and add peeled and chopped apples, sauting til apples are tender crisp, about 5 min.
Add flour, oats, brown sugar and cinnamon. Carefully place over cream cheese mixture in pan.

Prepare pan by placing a round parchment paper into bottom of pan before crust ingredients. I place pan in a parchment lined dark cookie sheet before baking.
Its a lot more fun throwing out one sheet of parchment paper than cleaning the oven.

I tried a variation of this recipe by making a short bread crust baked for 10 min. then topping w ¼ c seedless raspberry jam before pouring on cream cheese mixture. That was really good too.
