30g malted chocolate drinking powder, eg, chocolate ovaltine
30g cocoa powder
225g softened butter
225g caster sugar
225g self raising flour
1 tsp baking powder
4 eggs

3 tbsp malted chocolate drinking powder
1.5 tbsp hot milk
125g softened butter
250g icing sugar
50g dark chocolate (at least 50% cocoa), melted
1 tbsp boiling water

At least 20 maltesers for decorating

You need two 20cm/7 inch or 22cm/8 inch round sandwich tins. Best to use the opens with a loose bottom.
Grease the sides using a bit of butter (basically smear the butter on with a bit of the butter paper or greaseproof paper or worst case a knife). Line the bottom of the tin with baking paper. I have the magic reuseable liner which I have cut to size that I use every time.

Preheat the oven to 180C/fan 160C/gas mark 4.

Put the malted drinking powder and cocoa into a large bowl and pour over 2 tbsp spoons of warm water and mix to a paste. Add the remaining cake ingredients and beat until smooth.

Divide the cake evenly between the two tins (if you want to get it exactly right, put them on scales to get equal amounts - I have NEVER done this and pretty much always have uneven sized cakes but it adds to the charm...).

Bake in the oven for 20-25 minutes. If you put a skewer in the cake, it should come out clean and the cake should be just coming away from the sides. Leave in the tins for 5 minutes before turning out. To do this, get a normal knife and go around the edge of the cake to unstick it. The push up the bottom of the tin and it should come up. Take off the tin bottom and very carefully peel off the baking paper.

Cool completely.

To make the icing, put the drinking powder in a bowl with the hot milk. Mix till smooth. Add the butter, icing sugar and melted chocolate and mix again until smooth, then add the boiling water to give a gloss to the icing.

Place one cake on a plate and spread over half the icing. Sandwich the other cake on top and then spread the rest of the icing on top. Arrange the maltesers over the top. You could sprinkle a little bit of icing sugar over everything but I don't bother!

When cooking the cakes, check how your oven works. For a fan oven, you can generally put the cakes one above the other. Normal ovens, you may be better on the same shelf so that they cook at the same time but watch that your oven doesn't cook the sides quicker. Then you may want to turn the cakes around halfway. Try to only open the door once though.

You could use the simple butter icing recipe from Mum's chocolate cake recipe but use a mix of cocoa and drinking chocolate powder.
