1/2 - 3/4 Tsp Salt

1 Cup Butter

3/4 Cup Sugar

1 Egg

1 Tsp Strawberry Extract

1 Tsp Cream

Directions:

Preheat oven to 350º

Make sugar/salt dusting mixture in a small bowl (sugar, salt, food color, and lemon extract) and set aside.

1. Mix flour and salt together in a medium bowl and set aside

2. Add butter and sugar to the mixing bowl of a stand mixer and cream together until smooth.

3. Add egg yolk and mix well

4. Add Strawberry extract and cream until just incorporated; do not over mix.

5. Fold in flour mixture until well incorporated, but again do not over mix or dough will become tough.

6. Place dough on a clean, hard, dry surface and form into a roll (approx. 10" in length and 1 1/2" diameter)

7. Sprinkle dusting mixture onto the same surface, and roll cookie dough roll until it completely coated by the dusting mixture.

8. Tightly cover in heavy duty aluminum foil and place in the refrigerator for at least one hour (dough can be frozen and baked later; it keeps well in freezer.

9. Slice roll into 1/2" disks and bake at 350º on ungreased cookie sheet for 9-11 minutes.

10. Cool on cookie sheet for at least 5 mins then transfer to wire cooling rack for complete cooling.
