Ingredients: 1¼ cup flour 1 cup blended oatmeal ½ tsp salt ½ tsp baking powder ½ tsp baking soda 1 8 oz stick of butter ½ cup granulated sugar ½ cup firmly packed brown sugar 1 egg 1 tsp vanilla 6 oz chocolate chips ( I usually use semi sweet chips)

Directions:Pour oatmeal into a blender or processor. Blend to make a fine flour. Mix flour, blended oatmeal, salt, baking powder and baking soda in a small bowl and set aside.With mixer, cream butter, sugar and brown sugar until light and creamy. Add egg and vanilla extract to the mixture. Beat well. Add flour mixture, ½ cup at a time, to the egg mixture until well blended. Stir in chocolate chips by hand. Form walnut-sized balls or spoon drop onto cookie sheet (either spray cookie sheet with Pam or line with parchment paper). Bake at 350º for 10 minutes or until golden brown. Cook 2 minutes on cookie sheet, then transfer to cooling rack. |

Notes: This recipe was my go-to on the mission! Each missionary, on his or her birthday, would receive 4 or 5 of these cookies packaged in cello bags. We usually presented them at Zone Conference and sang Happy Birthday as they received the cookies. Sister Lenning, a neighborhood woman who helped cook for big occasions, would make this dough, form it into logs, then freeze it for later use. You might be interested to know that each birthday missionary received a phone call and birthday song from your Dad and I, just like we still do today to each one of you!
