2 t. olive oil
2 t bottled minced garlic
1/4 c. dry white wine
1 t. fresh lemon juice
1/4 t. crushed red pepper
1 can (14.5 oz.) no salt stewed tomatoes, drained & chopped
1 - 8oz. bottle clam juice
2 lbs. small mussels, scrubbed & debearded
2 T. chopped fresh flat leaf parsley

Directions:
Directions:
Heat olive oil in a dutch oven, over medium / high heat. Add garlic, saute 1 minute. Add wine, lemon juice, pepper, tomatoes & clam juice. Bring to a boil. Add mussels, cover and reduce heat. Simmer for 5 minutes or until shells open. Remove from heat. Discard any unopened . Stir in parsley. Serve with white wine & Italian bread. Makes 2-3 servings.
