ORIGINAL RECIPE
1 17 oz can apricots (can sub can peaches, or 2 peaches pitted but not peeled) (drained)
1/2 c mayonnaise
MY VERSION
1/2 c dried apricots
1/2 c ricotta (or greek yogurt)
1/4 c milk
Optional: 1 clementine, peeled
BELOW FOR ALL VERSIONS
3 c shredded carrots
2/3 c raisins
1/2 c celery slices
1/4 c chopped walnuts
optional: 1 Tbsp chopped candied ginger

Original Recipe: Blend apricots/mayonnaise
My recipe: blend dried apricots, ricotta, milk and clementine. If too stiff add a little additional milk.
Place carrots, raisins, celery, walnuts, and candied ginger if using in large serving bowl, toss gently to mix. Add apricot dressing and mix gently. Serve.
